Our winery, with a surface area of 21 hectares, extends at the entrance of the Alpujarra, slightly over 650 metres above sea level. Its high mountain slate terroir is rich in minerals and enjoys a miraculous microclimate, the expression of an extraordinary combination of climatic factors, typical of the Sierra, the sea and even three rivers in the area, which give rise to temperature fluctuations ranging from 35ºC during the day to 12 or 14ºC at night, in the months when the grapes ripen. This is why the grapes are harvested in October, after a long and peaceful ripening period, undisturbed by the rain and benefiting from the radiant sunshine.
Once the previous analysis of the terroir and climate had been carried out, the decision was taken to restructure the vineyard and to guide the large, internationally known varieties such as SYRAH, MERLOT and CABERNET SAUVIGNON on trellises, recovering at the same time the local variety TEMPRANILLO, used in the past by the winegrowers of the area to give colour to their musts. These unique varieties are used to make our wines, which are also being studied in one of the most prestigious oenological centres in Bordeaux, in order to verify their performance in this southernmost part of the European Mediterranean.
The winemaking cellar was completely renovated, replacing the old concrete vats with stainless steel tanks, equipped with cooling and nitrogen systems, as well as the rest of the winery machinery, including the must oxygenation line. Once this phase was completed, the construction of the ageing cellar began immediately afterwards, in the basement, where the American and French oak barrels and the bottle containers are kept, thus closing the ageing process.
